Published sensory work finds differences among Reb A, Reb D and Reb M, but a water test cannot rank every flavored or dairy product. Evaluate your own acid, aroma, fat and protein system. Reb M may be a useful candidate where a Reb A sample leaves unwanted bitterness; that is a reason to test it, not an automatic substitution rule.
Match the trial to the product
For beverages, inspect cold-water preparation, clarity and sediment after the actual heat process and storage. Ask for dissolution conditions at your concentrate strength: temperature, mixing time and order of addition belong on the trial record.
For dairy, taste in the finished protein and fat matrix at serving temperature. For tabletop products, examine the carrier and blending uniformity because a high-purity ingredient must be distributed through a much larger bulk phase. One approval does not cover all three applications.
Run a control and separate candidate batches at matched perceived sweetness. Keep acid, flavor and processing fixed during the first comparison, then optimize the preferred candidate. Record immediate taste and the finish after swallowing rather than giving only one overall liking score.
Close the specification gaps before ordering
Require the named glycoside assay, total glycosides, moisture and methods on the agreed specification. Review microbiological and contaminant limits against your market and customer requirements. A certificate marked “natural” cannot substitute for a production-route declaration.
Check that the quoted manufacturing route is covered by the destination market’s current ingredient definition and use conditions. Obtain pack size, storage requirements, trial MOQ and lead time for that exact grade. Keep sample and production codes linked so a later shipment cannot silently substitute another glycoside profile.
