Short Answer: Choose 25% or 50% mogroside V only after comparing assay basis, the complete ingredient composition and performance in your food. A 50% grade contains twice the declared mogroside V per unit mass of a 25% grade on the same basis; it is not automatically twice as sweet.
Start with the monk fruit extract specification, then request a representative COA for each quoted grade. “Monk fruit powder” alone does not identify an extract concentration or disclose a blended carrier.

“Total mogrosides” and “mogroside V” are different specification lines. A dry-basis result also cannot be compared directly with an as-is declaration without moisture information. Ask the supplier to resolve this before accepting a lower quote.
Use a cost screen, then a formulation trial
For an initial marker-cost comparison, divide the delivered price per kilogram by 0.25 or 0.50. This calculation assumes the declared fractions share the same analytical basis and ignores differences in sensory performance. It is a screening tool, not a recipe conversion.
Next, compare cost at the successful use level in your actual product. Record sweetness onset, lingering taste, color and clarity after processing. A darker extract may be acceptable in a cocoa product but unsuitable for a clear flavored water, even when the assay passes.
Put these conditions on the sample request
Keep the approved sample and COA as the comparison reference for the first commercial lot. A change of extraction source or carrier warrants another application check. Market acceptance is also ingredient- and use-specific: a specification or GRAS notice for one preparation does not establish permission for every monk fruit grade. Review the offered material before fixing the label or purchase order.
- State the finished application, destination market and whether an unblended extract is required.
- Ask for mogroside V and total mogroside results, moisture, microbiological limits and relevant contaminant testing with methods.
- Request the proposed pack size, moisture barrier, storage conditions and shelf life with its starting date.
- Separate trial MOQ from routine MOQ, and confirm whether sample and production material come from the same manufacturing source.
